Maintain year-round shade and humidity for shiitake cultivation. Choose a layering yard with at least 60% shade and orient it north-to-east to guard against sun and heat, & ensure a good water source.
Mushroom production depends on the host tree species selected for log preparation. Some recommended trees are Oak, chinkapin, tan Oak, & hornbeam. You need to select logs with a high sapwood content.
Cut the logs to 36 to 48 inch long & 2.5 to 10 inch in diameter. Incubate the logs promptly to avoid contamination by other microorganisms & lock in moisture before the mycelium found in the wood.
Drill 1x1 cm holes, 1.5-2 cm deep. The space should be 20-30 cm, with 5-6 cm b/w the rows. Insert sawdust spawn/wood plugs into hole, seal with Paraffin wax. The mycelium colonizing wood gradually.
Two types of stacking: crib stacks & lean-to stacks. After the incubation period, move to the growing house with optimal temperature, humidity and light for primordial initiation.
Control temp. to 5°C to 20°C and humidity above 65% to develop fruit bodies. Sync Log beating with water soaking. Remember to prevent red bread mold and green mold.
Harvest shiitake mushrooms when the caps are 70-75% open & curled. When the gills are visible, gently twist & cut the stem clearly. No wash needed. For the next flush, a rest period is above 1 month.
